chore: exclude .yaml file inside doc folder from sonar analysis

Description

• Updated sonarcloud.properties to exclude all .yaml files within the docs folder and subdirectories.

Why

This change prevents non-code files from affecting the SonarCloud quality gate checks.

Hi @shahmargi12 referring to eclipse-tractusx/portal-iam#207 (comment) sorry for the confusion, I meant to add such a .sonarcloud.properties in the portal-iam repo as part of this PR eclipse-tractusx/portal-iam#207, and just referenced to the portal-frontend repo as an example
