chore(iceberg): suppress java S3FileIO warning

What's changed and what's your intention?

• When use iceberg catalog with java implementation, logs like Unclosed S3FileIO instance created by will appear frequently and annoying. It seems the upstream is trying to fix it. spark.table() raises warn: Unclosed S3FileIO instance in GlueTableOperations apache/iceberg#7841 spark.table() raises warn: Unclosed S3FileIO instance in HadoopTableOperations apache/iceberg#10145 spark.table() raises warn: Unclosed S3FileIO instance in NessieTableOperations apache/iceberg#10144
• We can suppress it by passing init-creation-stacktrace = false
