v2.0.0 Refactor and package cleanups

Main changes: Remove snippets support (too opinionated) and highlight-operators (breaks certain syntax highlight). Use web-mode for HTML/CSS/JS/JSX/TS/TSX/JSON.
Minor changes: documentation improvements, along with other minor tweaks.
