Added support for URI coercion, i.e.

variable :SOME_API_ENDPOINT, :uri, :default => 'https://localhost:9999'

which is convenient for doing stuff like:

dashboards_uri = ENVied.SOME_API_ENDPOINT.merge("embed/dashboards")

etc..
