Description of the Change

Introduce setup for OpenTelemetry logging, including necessary dependencies and custom log processors to enhance logging capabilities.

Possible Drawbacks

OpenTelemetry logging signals for Python is still very much in development anv new version are realease quite often, and sometimes things break. This can however bea easily mitigated with more carefull testing.
