Update model-versions.md (#5487)

To dbt run the latest version of a model, we need the intersection of
the ``model_name`` and the ``version:latest`` method selectors. The
command in the documentations today has a whitespace which will be seen
as a union operation and will run all the models which have a defined
latest version and all the versions of the model specified.
