adding the following configs to project.yml per convo with @dbeatty10 :

Per [here](https://github.com/dbt-labs/dbt-core/blob/a1f78a8f622e3394b978eac6265123ba5bd17904/core/dbt/contracts/project.py#L286-L306), these should be added to the docs for profiles.yml -> dbt_project.yml:
- log_format
- printer_width
