# Kebab Recipe

**Yields:** 4 servings
**Prep time:** 20 minutes
**Cook time:** 10-15 minutes

## Ingredients

* 1 pound ground lamb or beef
* 1/2 cup finely chopped onion
* 1/4 cup finely chopped parsley
* 2 cloves garlic, minced
* 1 teaspoon ground cumin
* 1/2 teaspoon ground coriander
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 16 skewers
* 1 cup pita bread, cut into quarters
* 1/2 cup chopped lettuce
* 1/2 cup chopped tomatoes
* 1/4 cup chopped cucumber
* 1/4 cup tzatziki sauce

### Instructions

1. **Combine the meat and spices:** In a large bowl, combine the ground meat, onion, parsley, garlic, cumin, coriander, salt, and pepper. Mix well until evenly combined.
2. **Form the kebabs:** Divide the meat mixture into 16 equal portions and shape each portion into a kebab.
3. **Skewer the kebabs:** Thread each kebab onto a skewer.
4. **Grill or broil:** Grill or broil the kebabs over medium-high heat for 10-15 minutes, or until cooked through.
5. **Assemble the kebabs:** Place a pita bread quarter on a plate. Top with lettuce, tomatoes, cucumber, and tzatziki sauce. Add a grilled kebab and serve immediately.
