chore: update TSC and Ambassadors list

TSC

• @M3lkior resigns as is not able to be active, but still maintains Avro parser. Also Ludovic is still and will continue to be one of the most active Ambassadors of AsyncAPI. I had a chat with him on LinkedIn
• @NektariosFifes is no longer active, and communication is extremely limited. He did not vote for quite some time https://github.com/asyncapi/community/blob/master/TSC_VOTING_OVERVIEW.md and according to Charter, and also because of lack of communication, I removed him from TSC. He can come back anytime he want once he is active again.

Ambassador

• @jessemenning is no longer an Ambassador. There was no active ambassador work from his side since 2022. I reached out Jesse on email and he agreed.
