This PR updates the documentation to reflect the new default model gpt-4o-mini:

Updated README.md with the new default model
Modified the "model" section to explain the change
Updated configuration options table
Adjusted examples and instructions referencing the model

These changes ensure the documentation accurately reflects the current default settings of aicommits.
