This updates the analytics fields we send to BigQuery (to reduce the number of unnecessary fields we send) and updates the configuration to use the new "hidden PII" feature of DfE Analytics where PII data will be sent to BigQuery but hidden behind access controls.
This can only be merged in once DFE-Digital/dfe-analytics#143 is released.
