Update README.md

Added two Spring Boot PetClient demo apps.  These apps have an in-memory database but there is in docker compose  yaml file to run either MySQL or Postgress.  To run using MySQL just need Java 17+ and run "./mvnw spring-boot:run -Dspring-boot.run.profiles=mysql"
