Update build-open-source.md (w3f#4522)

* Update build-open-source.md I noticed that a project I just evaluated was marked `Stale` even though there was plenty of activity. This makes it a bit clearer that the status check only checks the main branch of each repo. * Update docs/build/build-open-source.md --------- Co-authored-by: Radha <[email protected]>
