Allow switching modes without stopping the session.

Currently, if you want to switch assistants, you need to terminate your session, and then switch modes. If you attempt to do so without terminating your session, the UI updates, but the assistant does not, which is misleading.

Ideally, if switching modes during a session, it should terminate your current mode automatically, and create a new session with the new assistant mode.
