Simple Dashboard

Is your feature request related to a problem? Please describe.
At the moment we don't have a good mechanism to understand the analytics around the platform. It would be good to have a dashboard.

Describe the solution you'd like
I think we should create a simple dashboard that can visualise the following.

1. Chart with the number of registrations per day
2. Chart describing the split of registration per day based on the University
3. Number of applications per mentor

Let me know what others are thinking.
