- 2 tsp lemon juice
- 2 tbs oil
- 1 c apple juice / cider
- 1 2/4 c warm water
- 1 tbs molasses
- 1 1/2 tsp active yeast
- 1 tbs brown sugar
- 1 1/2 c rye flour
- 4 1/2 c bread flour
- 1 tbs vital wheat gluten
- 2 tbs nonfat dry milk
- 2 tsp salt
- seeds - caraway, fennel, dill, etc
- Pre heat dutch oven and oven to 450 F
- Bake 45 min @ 450 F, remove lid for last 15 minutes; internal temperature should be 190 F
