Review current validation document

I would really appreciate a review of the current validation document and if you have any gaps you identify please open an issue where we can discuss.

This could not only be limited to R tests but system information itself.

I've uploaded an example file for an R environment. Its pretty solid on content but light in context. If anyone has anything they expect to see that would be really helpful.

Some initial notes after self review:
The final table doesn't include the name of the package and isn't formatting correctly.
The process of readLines doesn't format the information very well.
Change 'Fail' to '-' when a vignette isn't found for a package.
Add context to package tests and installation qualification.
Include R Code?
