fix: evm_snapshot/evm_revert should only affect blockchain state

Currently snapshots try to take the entire node's state (clock, impersonated accounts, filters etc) into account. Not sure if there was any reasoning for doing it this way instead of doing pure blockchain state (storage, blocks etc). In any case, upstream anvil is only doing the latter and we should probably do the same.
