Why do we need this new file? docker-compose-kompose.yaml

This is why I wanted to have a Pokeshop Helm setup that's the same as this k8s manifest setup. So we can get this onboarding behavior: https://github.com/kubeshop/tracetest-cloud/issues/858

You're right about the docker-compose-kompose.yaml. I'll kill that.
