Add anonymized example surveys

Adding anonymized example surveys of mentor/mentee pairing preferences and speednetworking preferences would make the format that the parsers are sorting out more clear and would allow others to test the executable scripts.

Data should be anonymized/partially parsed to remove some of the information automatically collected from the survey.
