I'm not sure quite where to start here, so let me know what information is needed to troubleshoot effectively. I don't know whether this is a plugin issue, or maybe something with Infinitude and the specific Carrier t-stats I'm using (SYSTXCCITC01-B).
I have a three-zone system, with a primary and two secondary thermostats. All three show up in HomeKit. All three are set to manual/hold in the Infinitude web interface and in the "myInfinity" app. All the status data shows up in the Infinitude web interface, looks like everything is working properly, as far as I can tell. The two secondaries always appear in HomeKit as being set to "Auto - keep between 68-76" which is how all three t-stats are configured. But the primary thermostat will randomly show in HomeKit as being turned off, or being set to a different temperature than it is actually set to; e.g., 72 instead of 76--and there's not a schedule block at 72, so even if the t-stat weren't in manual/hold mode it would never be set to that temp. I can reset it (in the Home app) to "Auto" mode, and it takes it...but it will eventually change status again.
