Samsung TV model UE40ES6100 (pre-Tizen, DLNA only) is not showing subtitles from Jellyfin 10.8.11
The used DLNA profile is "Samsung Smart TV" and there are no indication for any problem in the DLNA debug logging.
When a remote managed casting is used the subtitle option is shown, but cannot be selected.
The subtitle is an external SRT file and the encoding is not changing the behavior... ANSI, UTF8 (with/without BOM) - all variations are still not shown on the TV. i found out the bug exist here jellyfin/jellyfin#7771

I can't help (and I'm not a member of this project anyway) but your Samsung TV is recent enough that you seemingly could get the Orsay client running (original, forks that I can't vouch for).

Really old Samsung TVs use subtitle references in the browse XML as hints to request a subtitle, but actually expect the subtitles to be delivered in a different way. If you're a developer, in theory adding this to the device description is enough

i am trying to find a solution also and i am on root to your solution also but is something it cost money on top of it when you have just the video in your HDD :) in the other hand with tv box you could just have it all online, the jellyfin is not make sense to use it with that in mind.

I have the same issue and wanted to share the workaround I am using in case it helps.
I have observed that if I browse Jellyfin from the Samsung TV's DLNA interface, JellyFin provides the subtitle information using CaptionInfoEx in the XML response when listing container contents, and the TV will request the subtitle file along with the video when played. If I use the "Play On" function in the Jellyfin app (on my phone) to intiate playback instead of browsing from the TV itself, the TV ignores CaptionInfoEx and from what Google tells me it appears to expect the subtitle information to be provided in a CaptionInfo.sec HTTP header instead.
This issue appears to be limited to external subtitle files. If I instead embed the subtitle in the video container it will play back fine in both scenarios.
I have not tested this with multiple subtitle tracks, but embedding all of my forced subtitles into the video files seems to work around the problem and is good enough for my use. My Samsung TV only accepts subtitles in SRT format, so make sure not to embed them in another format.

The command I've used to successfully embed and play back subtitles (in this case forced English) is:
