Everytime I start neovim I see this:

# Plugin Updates
- **neoconf.nvim**                                                                                                      
- **lazy.nvim**

So far I have only one plugin:
lua/plugins/colorscheme.lua:

What is causing this? How can I get rid of it?

This is cause when the checker is enabled in your lazy.nvim config. You should remove the checker = { enabled = true}, opt. Here https://lazy.folke.io/configuration you can see the default configuration for lazy.nvim for future reference.

Thanks for the link. What is the normal workflow though? If checking for updates isn't enabled, I won't get any updates, right? Am I supposed to enable the checker every here and then when I feel it's convenient?

There is not one set way of doing things; it is really is up to you.

If you still want to have it automatically check for plugins without notifications you can do

checker = { enabled = true, notify = false}, 

I would suggest though if you are new to Neovim/lazy.nvim to skim over the documentation. Most of the answers to your questions in the beginning will be in there.
