[docs] It's not clear how to build docker image

It's not really clear what is the right way how to build docker image for this service. There are 3 docker files, various shell scripts and scripts defined inside package.json, which all seem to be doing very similar things, but none of the really work out-of-the-box. Preferred way of building the docker image should be documented.
