Describe the desired behavior

Current svg-symbols folder is called 'symbols', rename it to 'symbols-svg'.

Describe the current behavior

The 'symbols' folder is referenced in many files and the folder name is duplicated in places; it's currently the symbol-mui's output folder name. Refactoring will require being able to tell which folder the build & test scripts are referring to.
