Unpin pydantic version

We had to pin pydantic after 2.10 was release due to the following error:

E       pydantic.errors.PydanticUserError: `ErtConfig` is not fully defined; you should define `List`, then call `pydantic.dataclasses.rebuild_dataclass(ErtConfig)`.
