I think a platform like Docusaurus is the fastest way to document things as I rapidly iterate on the product.
Also, the software does not have support for public-facing docs yet. Just internal docs behind a login.

I would suggest using the struggles you mentioned above to improve Docmost as a product.
For example, if you prioritze the support for public facing docs people will provide more feedback since they don't have to run their instance to see how a R/O page looks like.
For your first point about rapid iteration, this coul be another feature for Docmost - if you face any additional friction over using Docusaurus, then it might mean that there is something wrong with you product.
I personally value (in the context of software development) something that stores its files into GIT. Maybe this could be another feature to keep the docs repo and Docmost as a frontend (:
