I would welcome an option that chose a random node from the given network's node list at each startup (and, if the connection failed, it skipped to another random one).
the benefit is that a single node couldn't get a complete view of the times when you are online with a wallet, reducing the amount of data that a given node can collect about you.
there is a downside in the case of surveillable blockchains, namely, multiple nodes could learn your address set, but you could (and already should) avoid this by simply not adding any nodes you don't trust.
