Personally I use Pigments, Equator2 and Vocoder V

As for what I care about with MIDI:

• Pitch bend. This is critical for pedal steel since individual strings can be bent.
• Pressure. I believe MG3 just maps volume to pressure. This could help if you want the synth to decay in volume with the same curve that your string does, although I imagine it could also work fine to just let it decay as it would with a normal keyboard.
• Strike. This seems to be some kind of rate of volume change at the very start of a note, a measure of attack. This is useful for mimicking how hard a keyboard key is pressed. Clav patches use this for example. When you dig into a string, you want the synth to "dig in" as well.
