Allow to set mail server settings via civicrm-docker-install or environmental variables #15

I'd like to bind the docker container to an given mailserver during the installation It would be very cool to have a fitting hook for this and e.g. set mail via e.g. a mailer string.

This is something that you can do via cv setting:set mailing_backend post installation. If you want to set it via an environment variable then we'd need to allow setting to be configurable via an environment variable.

If you'd like to do that, please file an issue on civicrm core https://lab.civicrm.org/dev/core/-/issues/
