Anchovy Yogurt Herb Marinade

Ingredients

Per pound of meat

  • 1½ heaping cups mixed tender herbs
    • e.g. dill, parsley, cilantro, basil, mint, tarragon, chives
  • ½ cup plain greek yogurt
  • 2 anchovy fillets
  • 2 T extra-virgin olive oil
  • ½ lemon, zested, juiced
  • 1 clove garlic, smashed
  • Kosher salt
  • Freshly ground black pepper

Special equipment

  • Microplane/zester
  • Blender
