googleFontsOptions: {
        fontsDir: '/fonts/',
        cssDir: '.',
        cssFilename: 'fonts.css',
        fontDisplayType: 'swap',
        format: 'woff2'
    },

With this config all files will be downloaded to ./../fonts and gulp.dest path will be ignored.
