Closes #119

Summary

  • Added contract addresses from Balancer v3 launch to PoolHelpers.sol
  • Modified scaffold to fork Mainnet instead of Sepolia
    • See addresses in PoolHelpers.sol
    • See targetFork in scaffold.config.ts
    • Changed fork command to require network arg like yarn fork --network mainnet
