So the Twain2AirScan Project has matured.
The Twain2AirScan project allows the sharing of a Windows Twain or WIA scanner over the eSCL protocol. Just like Legacy printers can now be shared as "driverless", this allows a Windows scanner to be shared as "Driverless" over the eSCL protocol.
Version 2.0 now has been tested working with Mopria Android, MacOS, and Sane-Airscan. It works in "Most" Cases . It still has some limitations like no Grayscale scans as the CmdTwain that it relies on seems to have some bugs related to producing Grayscale images, however in most cases you will not notice this as many Linux and OSX apps request a color scan and make it Grayscale at the app. The only ones that do not are Mopria Scan for Android and AirScanner for iOS. If necessary, I can add a dependency of Imagemagick but that would make the whole thing a little heavier.
It works with Simplex ADF (one sided document feeder) and platen scans. It can internally produce multi-page (color) PDFs for clients such as Mopria that rely on scanner produced multi page PDFs.
I am sure there are some bugs yet to be found but those can be identified only after time and testing.
