Make site easier to edit without having to touch HTML

We could make the copy of the site easier to edit but moving all of the structure to _layout files and having the content be in .md files. We already do this for some pages (like privacy.md and services, to some extent) but it would be a nice long-term goal to have this kind of structure for all pages.
