It is not documented how you would move an existing repository under the Utrecht University organization; using the transfer ownership function you lose administrative privileges to your own repository.
It works well enough if you make a repo directly under UtrechtUniversity but it is not intuitive on how to achieve the same result by moving an existing repo.

But also, in spite of quite many years of experience with git/github, my experience with mirroring is quite limited. For that reason I think it might be nicer to have a tutorial on how to re-create your repository under UtrechtUniversity and then set that as a new origin.
