Make pnpm the default way of installing the monorepo.

Not to be confused with pnpm for agents, which is a separate PR: #497

WIP because of breakage installing the globally published module:

 ERR_PNPM_LINKED_PKG_DIR_NOT_FOUND  Could not install from "/Users/a/Library/pnpm/global/5/packages/upstreet-agent/packages/codecs/packages/mpg123-decoder/packages/wasm-audio-decoders-common" as it does not exist.
 ```

Also, the docs need to be updated.
