Is it possible to allow running SOQLDataset.iterate with a specified ORG which is different to the target loading ORG? Use case would be directly loading data from one ORG into another ORG with option of faking certain source fields while keeping the original data for other fields.

That's a reasonable request. We can leave it open for a while and see if others request it also.
