Definition of Done / Acceptance Criteria

• All anonymised fields to have their value checked in an automated test
  • Also check this in production, to further mitigate orthanc-anon ReceivedInstanceCallback must not allow exceptions to go uncaught or anonymisation will be compromised #368
• Check automatically that no unexpected fields exist
