GitLab installs using some kinda internal chef stuff which blows up when you set letsencrypt['enable'] = true in gitlab/templates/gitlab.rb.j2

Not sure if it's because the integration is broken or if the role doesn't support it properly.
Supposed to be simple to do it, see:
