Disabled key conversion in matchms tools

This PR include the following:

• disabled key conversion for the matchms tools mentioned in issue Disable key conversion in data handling matchms tools #480
• handled string sanitization ([],{},, (/, +,-, () are already part of default)) for matchms add key
• updated test and test data
