Since the new release of Pydantic 2 we need to migrate the project to the new version.
In particular inside the cookiecutter template we need to update the config file to support the new logic in pydantic-settings.

Of course it's important to add some tests to check if it's working.
We have also created a CONTRIBUTING guide to help develop and update the project.
