Refactor climbing data to separate bouldering VScale from YDS grade system

The YDS grade system currently contains both route climbing 5.X and bouldering Vscale grades. The Vscale grading should be separated out into its own V scale grade system. This would also be consistent with the French and Font grade systems being separated.

• Update the climbing data for bouldering climbs to have their own V scale grading system rather than being under the YDS grade system
