Check plausible integration

Check integration of Plausible for tracking website access.

Possible packages to look at:

• https://github.com/kilobyteno/laravel-plausible

One thing to discuss is whether or not we want to integrate Plausible directly or allow admins to insert their own custom tracking scripts into the HTML (similar to the custom CSS feature already present).
