Change the deployment of Limitador to enable the exhaustive metrics and the rateLimitHeaders as our default

Kuadrant operator needs to import the Limitador type that expose those settings. As of today, only v0.6.0 is available and only expose RL headers settings.

This issue is depending on the release v0.7.0 of the limitador operator
