Correction of MiniWallet information in eudi-wallet-rfcs

this should probably be a "Pull request" but I don't know how to do those.

Anyway, the information about the MiniWallet (Vero) should be corrected:

@lalc now you lost me :-D What's phase 01 and phase 02, can't find them on the page?

The page is the README.md page for eudi-wallet-rfcs and the location is under the header:
Organisation Wallets (Holder, Issuers and Verifiers)
Date of availability: 15 November 2024

There's a table where the last row states:
"Mini Suomi (Vero, Finland) | Link to be provided | ✅ | ✅ | ✅"

• Phase 01 of EWC LSP which was carried out until end September.
• Phase 02 is the phase we are in now.

What is wrong in the readme and what do you want corrected?
