It would be great if I could leave my responses as they are when running cannoli - either as a global option or by manually running a certain point in the chain.

This would definitely be useful, and we're moving in that direction, so perhaps sometime soon that could be possible.

In the meantime, there's a great plugin: Caret which more geared towards exploring and progressively prompting llms on the obsidian canvas, you should check it out!
