Description

Our README is not up to date for our environment setup (e.g. PostgreSQL, Prisma, and Next App) and a complete tech stack (suggestions: UML diagram of tech stack (amplify, psql, next app on EC2)

Narrative:
As a developer
I want to create readable documentation
So that other people using this codebase can understand how to recreate and improve on the current codebase.
