Calyx were able to get it off the ground while microg, as far as I understand

Looking at your links, It seems that the eSIM support is device dependent, at least on CalyxOS.
Since I only own a Pixel 3, I can only test on this. And since I don't have an eSIM contract, I can't test it at all :p
So please try to apply those patches you linked and build CHAOSP, then test eSIM support and report back.
If it's working for you in this setup, I'll try to think of a more generic patch.
Btw, it seems the subject was already discussed for RattlesnakeOS (the ROM CHAOSP is based on) here
